Among the rice fields of Shibata, Niigata —
an auberge that opens for one party a day.
Gently loosening the very idea of “season,”
it draws on wisdom long rooted in this land
to find new depths of flavour in its ingredients.
Within walls raised from local soil and timber,
the seasons this land has stored away are served as thirteen plates.
One night here becomes a new “root” reaching toward the future.

Cuisine
Chef Makoto Fuse — who served as chef de partie under Antoine Westermann in France — transforms mountain vegetables, river fish, seasonal game and the day’s seafood, one plate at a time.
Built around Niigata produce, with sake and wine chosen from Niigata breweries and wineries — a menu beyond the seasons, one that could exist only on that day.

Né was born within the grounds of the Honma family,
who first cleared this land and kept it for generations.
The rice fields, the farms, the mountains, the sea — they are all still here.
What grows thinner, little by little, are the people and the systems that tend, harvest, carry and inherit them.
Né was made to reweave the resources and work remaining in this land into another kind of value, through cuisine and architecture, and to pass them on.
Even in an age awash with information, a meal cannot be digitised.
To go, to be present, to touch with all five senses —
in that instant lives an experience that moves the heart.
